Which ingredients?
Here are the ingredients you will need to make your pumpkin gratin:
- 1 pumpkin (about 1 kg) đ
- 20 cl of liquid cream đ„
- 150 g grated cheese (ComtĂ©, GruyĂšre, or Emmental) đ§
- 2 garlic cloves đ§
- 1 onion
- 2 tablespoons of olive oil đ«
- Salt and pepper đ§
- Nutmeg âš
- A few sprigs of thyme đż

đ„ Cook time: 45 min
- Preheat your oven to 180°C (thermostat 6).
- Wash the pumpkin and cut it in half. Remove the seeds with a spoon. If it is organic, you can keep the skin, which is edible.
- Cut the pumpkin into thin slices about 5 mm thick.
- Slice the onion and finely chop the garlic cloves.
- In a skillet, heat the olive oil and sauté the onion for 3 to 4 minutes until translucent.
- Butter a gratin dish and rub it with a clove of garlic to add flavor.
- Arrange a first layer of pumpkin slices in the dish. Add some of the sautéed onion, season with salt and pepper, and grate a little nutmeg.
- Repeat the process to create several layers until all the ingredients are used up.
- In a bowl, mix the cream with the chopped garlic, salt, pepper, and a pinch of nutmeg. Pour this mixture evenly over the gratin.
- Sprinkle generously with grated cheese and add a few sprigs of thyme.
- Bake for 45 minutes.
- Check whether it is cooked by piercing the pumpkin with a knife: it should be very tender.
- Let stand for 5 minutes before serving hot.
Ceercle tip: Cover your dish with aluminum foil for the first 30 minutes of cooking. This will allow the pumpkin to cook through without burning the cheese. Remove the aluminum foil for the last 15 minutes to achieve a beautiful golden brown crust.
Your pumpkin gratin will keep for 2 to 3 days in the refrigerator in an airtight container. You can reheat it in the oven to restore its crispiness.
