It's not always easy to tell the difference between chervil, parsley and coriander plants! To recognize them:
1. Look at their leaves: coriander leaves are more rounded, while parsley leaves are pointed. Chervil leaves are smaller and more sharply cut.
2. Rub the leaves between your fingers. Coriander has a powerful, distinctive fragrance, chervil an aniseed-like scent!
If in doubt, just taste the leaves 😉
Keep the substrate moist for chervil and coriander. For parsley and chives, water when the first few centimetres of substrate are dry. Tarragon is the least water-hungry of all plants, and appreciates regular but moderate watering.
To enjoy their flavor all year round, there are two options for preserving your herbs: freezing or drying them.
1. Freeze your herbs
Chervil, parsley, chives, cilantro, and tarragon are easy to freeze. Wash your herbs, then pat them dry with a cloth. Depending on your preference, you can freeze your herbs in bunches or chopped.

For ready-to-cook portions, freeze your herbs in an ice cube tray! Place your chopped herbs in each compartment of the tray, then fill three-quarters full with a little water or oil. These little aromatic ice cubes will be super easy to use when you're cooking 😉
2. Dry your herbs
The herbs in our box are well suited to drying. However, it is worth noting that dried chervil loses much of its flavor: it is better to eat it fresh or freeze it!
Clean your herbs and dry them gently to remove excess water. Use string to tie 5 to 10 stems of your plant together to form bunches. Hang the bunches upside down in a dark, dry, well-ventilated room.

Drying will take a few days to two weeks, depending on the plants. If the leaves are slightly brittle to the touch, they are dry! For proper storage, place your dried herbs in airtight glass jars.

A recipe to try: coriander pesto
Ingredients:
- 1 bunch fresh coriander
- 6 to 8 tablespoons olive oil
- 2 garlic cloves
- 80 g almonds, pine nuts or pistachios to taste
Recipe:
Add all your ingredients, except the oil, to a blender. Blend, then add the oil until you reach the desired consistency (to obtain a more or less liquid pesto). Serve coriander pesto as a sauce for pasta, as a dressing for salads, or as a side dish for fish and meat dishes. Store coriander pesto in the refrigerator for one week.
