Cooking daisies

An edible plant

Daisy flowers, leaves and flower buds can be eaten raw or cooked. The leaves have a slightly peppery, bitter taste. The flowers are sweeter.

Flower buds can even be candied in vinegar like capers.

Its benefits

Daisies have many medicinal properties. It is known for its anti-inflammatory, digestive, diuretic, expectorant and healing effects.

  • Expectorant: Helps clear the respiratory tract when coughing or suffering from bronchitis.
  • Diuretic: Helps eliminate toxins.
  • Digestive: Stimulates digestion.
  • Anti-inflammatory: relieves joint and muscle pain,
  • Healing: accelerates healing of small wounds.

It is available as an infusion, oily macerate, mother tincture or poultice.

Our recipe: daisy oil macerate

The oily macerate is ideal for moisturizing and soothing the skin, or massaging aching muscles.

Ingredients:

  • Fresh or dried daisy flowers (about 1/2 jar) 🌸
  • Vegetable oil (organic sweet almond, jojoba, olive or sunflower)
  • Clean, dry glass jar 🫙
  • A warm, bright place ☀️

Recipe:

1️⃣ Harvesting and drying flowers

  • Pick daisies (avoid roadsides).
  • Spread them out on a clean cloth.
  • Leave to dry for a few days in a dry, well-ventilated place.

2️⃣ Preparing the macerate

  • Fill half your jar with the dried flowers.
  • Cover completely with vegetable oil.
  • Close the jar and shake gently to impregnate the flowers.

3️⃣ Macerate

  • Place the jar in a warm, bright spot, but not in direct sunlight.
  • Leave to macerate for 4-6 weeks, stirring the jar every 2-3 days.

4️⃣ Filter and store

  • Filter the oil through a fine sieve.
  • Transfer the oil into a clean bottle, preferably dark glass (for better conservation).

⏳ S helf life: approximately 6 months to 1 year in a cool, dark place.
