Which ingredients?
To prepare your coriander pesto, you will need the following ingredients:
- 1 bunch fresh coriander
- 6 to 8 tablespoons olive oil
- 2 garlic cloves
- 80 g pistachios
- Optional: 50g Parmesan cheese
You can replace the pistachios with almonds, hazelnuts or pine nuts, as you wish.
Did you know? Everything about coriander is good: the leaves, of course, but also the seeds and roots are edible. But leave out the stems, which are a bit fibrous đż
This aromatic plant is full of benefits. It is rich in antioxidants (such as beta-carotene) and vitamin K. It has a positive impact on blood sugar and cholesterol levels.
Our coriander pesto recipe
â±ïž Preparation time: 5 minutes.
Add all your ingredients, except the oil, to a blender. Blend to a smooth paste. Gradually add the olive oil until you reach the desired consistency (to obtain a more or less liquid pesto). Mix well. Your pesto is ready!
Serve pesto as a sauce for pasta, as a dressing for salads, or as a side dish for fish and meat. Enjoy!
If necessary, store your pesto in the refrigerator for up to a week.
