Which ingredients?
Here are the ingredients you need to bake your summer vegetable pie:
- 1 shortcrust pastry 🫓
- 3 tomatoes 🍅
- 1 zucchini
- 1 eggplant 🍆
- 1 red onion
- 100g grated Comté cheese 🧀
- Herbes de Provence 🌿
- Salt, pepper 🧂
- 2 tablespoons olive oil 🫒
To make homemade shortcrust pastry, you'll need 250g flour, 125g butter, 1 egg yolk and 2 or 3 tablespoons water.

Our recipe for summer vegetable pie
🔪 Preparation time: 15 min
🔥 Cooking time: 30 min
Start by preheating your oven to 180°C.
First prepare your shortcrust pastry. Dice the butter. Mix it with the flour until you obtain a sandy texture. Add the egg yolk. Gradually add the water until you have a soft dough.
Roll out the shortcrust pastry in a tart tin. Prick the base lightly with a fork to prevent it from puffing up during baking.
Slice the eggplant, tomatoes and zucchini. Slice a red onion. Arrange them on the pastry.
Season with salt and pepper. Drizzle with olive oil. Sprinkle with herbes de Provence and grated Comté cheese.
Bake for 30 min at 180 degrees until the pastry is golden brown and the cheese has browned.
