Yet there are many ways to use strawberry tails. It's delicious, economical and environmentally friendly!

First of all, did you know that you can actually eat the green tail as well as the strawberry itself? They're edible and packed with nutrients! They're rich in vitamin C and minerals, including iron and calcium 💪

🌿 An original pesto

Cook your strawberry tails into a pesto that's out of the ordinary! A change from basil or coriander pesto 😉

Here are the ingredients you need:

  • 200g strawberry tails
  • 50g Parmesan cheese 
  • 50 g basil or mint
  • 50g walnuts (cashews, hazelnuts, pine nuts, almonds...) 
  • 1 garlic clove 
  • 60 ml olive oil 
  • ½ lemon 

For the recipe, nothing could be easier: blend all the ingredients except the oil until you obtain a homogeneous texture. Once that's done, add the olive oil a little at a time while continuing to blend.

Your pesto is ready to enjoy! It's the perfect accompaniment to salads and bruschetta.

🍹 Homemade syrup

Concoct a homemade syrup to flavor your drinks, fruit salads or yoghurts.

To make this superb syrup, you need : 

  • Approx. 500 g strawberry tails
  • 250 g sugar 
  • 500 ml water
  • Juice of half a lemon

In a saucepan, bring the strawberry tails, sugar and water to the boil. Simmer for about 20-30 minutes. The liquid should be well infused and slightly thickened.

To filter your syrup, use a fine sieve or colander. Strain again through cheesecloth or a coffee filter for a clearer syrup.

Then add the lemon juice and mix well, to help preserve the syrup. The syrup keeps well for up to a month in the fridge!

🍓 Flavored vinegar

Flavor vinegar with strawberry tails for summer salads!

In terms of ingredients, you will need :

  • 500g strawberry tails
  • 500 ml cider vinegar or white vinegar
  • 1 tablespoon sugar 

In a clean jar, add the strawberry tails, and pour in the cider vinegar or white vinegar until the strawberry tails are completely covered. Add the sugar and stir well to dissolve.

Close the jar tightly and shake gently. Leave in a cool, dark place for about 2 weeks. From time to time, shake the jar to blend the flavors. 

After 2 weeks, strain the vinegar through a fine sieve or strainer to remove the strawberry tails.

Flavored vinegar keeps well for several months in a cool, dark place.  

🫖 An infusion or iced tea

Make strawberry-tail iced tea to refresh your guests. Here's a simple and delicious recipe!

It requires few ingredients:

  • 200g strawberry tails
  • 1 liter of water
  • 1 to 2 tablespoons honey or sugar 
  • A few mint or basil leaves 
  • A slice of lemon or ginger (optional)

Start by bringing the water to the boil. Add the strawberry tails, mint or basil leaves and a slice of ginger or lemon. Reduce heat and simmer for 10-15 minutes. 

Leave the infusion to stand for around 5-10 minutes to allow the flavours to develop. Then strain the infusion through a fine sieve. 

Add honey or sugar to the hot infusion and stir well to dissolve.

Serve the infusion hot. Alternatively, let it cool and serve with ice cubes for a refreshing drink.

Can strawberry stems be composted?
