Her recipe for pan-fried chard with tomato confit

These are 2-cooked chard (steamed and pan-fried), with tomato confit. A delight, especially at the start of the season, as they are very, very tender.

1. The 1st step is the hardest: cleaning and cutting the chard! Remove the threads from the ribs and cut into 1cm x 5cm sections. Chop the green.

2. Steam the ribs (in water works too) until tender (about 15 minutes).

In the meantime, fry 3 cloves of garlic in a frying pan, discard the green part and cook like spinach.

3. When the ribs are cooked, add them with the green and add a dozen chopped tomatoes and 3 sprigs of lemon thyme.

4. Simmer, covered, for 10 minutes.

5. The best part: tasting! On toast or with polenta, it's great.
