To prepare your parsley velouté, you'll need the following ingredients:...

  • A bunch of flat-leaf parsley 🌱
  • 1 homemade broth or bouillon cube 🍜
  • 1 tablespoon olive oil 🫒
  • 2 garlic cloves 🧄
  • 2 portions fromage frais (or 10cl vegetable cream) 🧀
  • Pepper

Our recipe for parsley velouté

🔪 Preparation time: 5 min
🔥 Cooking time: 25 min

In a pot, add the coarsely chopped parsley to the olive oil over medium heat. Sauté for 2-3 minutes, stirring regularly, until it begins to release its aromas.

Pour the vegetable or poultry stock into the pot. Bring to the boil, then cook over medium heat for around 20 minutes, to allow the parsley to infuse well into the liquid.

Once cooked, add the fromage frais and peeled garlic cloves. Blend with an immersion blender until smooth and creamy.

Season and serve!
