Ingredients:
- Pineapple skin
- 500 ml water
- 150 g unrefined sugar (brown or white sugar)
- Vanilla bean or vanilla syrup
- Lemon juice
Recipe:
- Boil the bark in water for 20 minutes.
- Remove from heat and leave to macerate overnight.
- Strain and squeeze out the skin.
- Add the sugar and lemon juice.
- Boil for 20 minutes to obtain a thick syrup.
- Let cool and bottle.
We recommend you try this syrup with sparkling water and mint leaves - it's delicious!
☕️ A detox infusion
Make an anti-inflammatory herbal tea with pineapple peel! It's depurative and diuretic.
- Carefully wash the pineapple skin (organic is best).
- Bring to the boil in 1L of water.
- Leave to infuse for 15 to 20 minutes.
- Strain the infusion.
You could just as easily make a cold tea for summer! Add ice cubes.

🍍 A refreshing face mask
Pamper your face with a 100% zero-waste mask made from pineapple skins!
Ingredients:
- 2 slices pineapple peel
- 1 teaspoon honey
- 2 tablespoons organic jojoba or olive oil
Recipe:
- Clean the pineapple skin.
- Remove the inner part of the skin and blend.
- Add a spoonful of honey and two tablespoons of the oil of your choice.
- Apply to a clean face, avoiding the eye area.
- Leave for 10-15 minutes, then rinse.
Your skin is fresh and revitalized.
🥗 Flavored vinegar for your salads
Are you interested in natural fermentation? Turn your pineapple skins into a homemade vinegar perfect for salads or marinades.
Ingredients:
- 350 g pineapple skins
- 800 ml water
- 70 g white sugar
- Juice of one lemon
Recipe:
- Pour the skins, water, white sugar and juice of one lemon into a jar.
- Mix well and cover with a cloth.
- Leave to ferment for 3 days.
- Close the jar halfway and ferment for 3 weeks.
- Stir every day for the 1st week.
- Strain and transfer to a vinager or other jar.
- Cover with a cloth and leave to ferment for a further 1 month.
- A vinegar "mother" forms naturally. When you like the smell and taste, bottle it!
Bonus: save the vinegar mother for the next batch.
🫙A zero waste cinnamon compote
For a homemade dessert, turn pineapple peel into a tasty compote, a real treat for the taste buds!
Ingredients:
- Pineapple skins
- 50 to 100g sugar
- 1 cinnamon stick
Recipe:
- Cut the peel into small pieces and place in a saucepan.
- Add water to the halfway point
- Pour in 50 to 100g of sugar according to your preference, and a cinnamon stick.
- Bring to the boil, then simmer over low heat for 45 minutes. The bark should become soft.
- Once the peel is soft, remove the cinnamon.
- Blend, let cool, then store in the fridge!
The result is a fragrant compote full of sunshine!
Pair with a great fromage blanc or fries, just like in Belgium! 💚
♻️ Can pineapple skins be added to compost?
You can add pineapple peel to your (lombri)compost as long as you cut it into small pieces! It's best to add small quantities to avoid upsetting the balance of your compost, otherwise the little inhabitants won't like it. With a little patience, this bio-waste can be transformed into an organic amendment to nourish your plants.
Avoid pineapple leaves, which are very hard.
